On the morning of August 25th, 2025, as the first rays of sunlight slipped through the glass front, Chef Simon stood before the new glass door, holding the keys in one hand β and his memories in the other.
A childhood dream had finally taken shape: a small restaurant with a warm Eastern soul called Zaytona Grill. It wasn't just a kitchen β it was a space for people's stories, for the flavors of home, and for dreams he had long tucked beneath his skin. He took a deep breath, opened the door, and began the first day of a journey he didn't know where it would lead β but he knew exactly where it started: from the heart.

A Rare Gift for Food
Since childhood, Simon had a rare gift: he cooked as if cooking were his native language. Every time he stepped into the kitchen, the smell of bread and spices would tell a new story. But he didn't start with a restaurant β it all began with a small supermarket in his hometown, Nazareth, where he used to tuck homemade sandwiches onto the shelves for his favorite customers.
Little by little, those sandwiches drew more attention than the products themselves.
"Every flavor is crafted with passion, as if it were cooked just for you."

The Rise
The Flavor You Never Forget
With time, the supermarket transformed into a unique sandwich shop, and Sima'an's name became tied to a taste that people began to call "the flavor you never forget." Success came quickly. His name started echoing in the streets. Then, after several years, he opened a burger restaurant β one that surprised everyone with its quality. Sima'an's name became a mark of excellence, kind service, cleanliness, and food that felt like home.

The Dream That Crossed an Ocean
But Simon always saw further. His old dream wasn't just a successful restaurant β it was a restaurant in Miami, the city of lights and diverse flavors. After years of saving and planning, he decided to leave everything behind, carrying only his recipes and his talent to where the real story of authentic Eastern flavor would begin.
Today, Zaytona Grill didn't open just to serve food β it opened to serve memories. Every dish tells a story. Chef Sima'an didn't come to Miami to sell recipes β he came to share with you the taste of home, the warmth of family, and the honesty of heart.
